Plum and/or peach sponge

As the last days of Summer approach, I'm using up the fruit and veg I can find. As some of you know, this summer has seen me giving up the fight with the Gophers in my backyard, and I've only managed to harvest a few tomatoes, a couple of kernels of corn, although there are some watermelons that are looking promising.

Yesterday I raided my neighbors' orchard again and made delicious peach and plum sponge. Super easy, and I might make another one later with ground almonds instead of flour, which I imagine will be deliciously dense and moist (and I love anything with ground almonds)...

In the meantime for the original plum and/or peach sponge,

line a buttered dish or cake tin (spring clip one) with cut-up peaches and/or plums.
sprinkle 2 tablespoons cornstarch, 2 tablespoons sugar on top (I add cinnamon too)

Cream together:

1 cup sugar
1 cup butter
until pale

Add 3 eggs to sugar and butter mixture, mix well.

Add 1 cup flour

If too thick, add a little milk.

Pour over fruit in pan and spread out to cover.
