Peppermint Creams
I've just switched recipes as the last one, with the egg whites and sugar, wasn't great. I apologise for not trying it beforehand - all the others are tried and tested, but this recipe gets rave reviews. I'll be making them later today...
Ingredients
1 1/4 tablespoons margarine
2 tablespoons milk
3 drops peppermint extract
3 drops green food coloring
1 lb icing sugar
Directions
heat the milk and marge until it's liquid.
Do not boil.
Cool a little and add the sugar and peppermint extract and green food coloring.
Mix to form a soft ball.
Knead thoroughly.
Dust a surface with icing sugar and roll it into strips about 1/2 inch thick.
Cut at 1 inch intervals and roll into small balls.
Place on a sheet of grease-proof paper to dry overnight and store in an airtight container.
You can decorate them with melted chocolate, If you feel like doing the extra work!

They do look terribly good... Am going to a cookie party in a week; I may have to give these a try. Thanks! One question, re: "greaseproof" paper. Would parchment paper be such a thing?

Just wondering if I am missing something here. My dough was kind of soupy, and I didn't get anywhere near 30 creams. Very confused where I went wrong.
