Breakfast of Queens
I just had to share my breakfast with you. Since the whole vegan adventure, I tend to start my day with a protein shake, but I was in the city all day yesterday and forgot to buy bananas, and protein shakes without the bananas just don't cut it.
So this morning I had to make do with what I had. I found some leftover white bean hummus I had made the other day, a bag of spinach, 2 Portobello mushrooms, and some wholewheat flat sandwich buns.
I toasted the buns, spread them with the hummus, and then added a tablespoon of oil to a skillet, with a finely minced garlic clove.
One mushroom, sliced, went in, with a generous sprinkling of salt - mushrooms need salt to bring out their flavor - and when the slices were smelling delicious, soft and turning golden brown, I threw in a handful of spinach leaves, and continued stirring until the spinach was wilted.
I heaped the lot on top of the hummus, and it was HEAVENLY.

Just made your white bean hummus, added some cumin powder, and it is delic! Thank you - I am now breathing garlic over my kids!
